--- title: "Sesame Noodles" date: 2019-07-02T13:51:23-04:00 tags: - recipes draft: false --- This recipe shamelessly stolen from: https://cooking.nytimes.com/recipes/9558-takeout-style-sesame-noodles ## Ingredients * 1 lb noodles * 2 tbsp sesame oil * 3 1/2 tbsp soy sauce * 2 tbsp rice vinegar * 2 tbsp sesame paste (not tahini) (not necessary) * 1 tbsp peanut butter (smooth) * 1 tbsp sugar * 1 tbsp ginger (finely grated) * 2 tsp garlic (minced) * 2 teaspoons chili-garlic paste (?) ## Steps 1. Bring a large pot of water to a boil. Add noodles and cook until barely tender, about 5 minutes; they should retain a hint of chewiness. Drain, rinse with cold water, drain again and toss with a splash of sesame oil. 2. In a medium bowl, whisk together the remaining 2 tablespoons sesame oil, the soy sauce, rice vinegar, sesame paste, peanut butter, sugar, ginger, garlic and chili-garlic paste. 3. Pour the sauce over the noodles and toss. Transfer to a serving bowl, and garnish with cucumber and peanuts. ## Notes Can take sesame paste, and instead use sesame oil + pb Cayenne pepper subs out the chili-garlic paste Chinese sesame paste can be hard to find. At my local (well stocked) Asian market I found Lan Chi brand labelled as "Chinese Salad Dressing". Consider cutting sugar a bit, doesn't need to be as sweet as it is
